Kick The Can (Habit) And Slow Cook Your Beans

Cooked beans are a staple in our family. Whether they’re pinto or black beans, we cook up a pot of beans at least once a week. Today, the house smelled wonderful as the beans cooked in the slow cooker with garlic and onions.

For the past 3 years, we’ve gone plastic-free in the culinary arts so that means no canned food. Most cans have bisphenol A (BPA) in them which is an epoxy resin-like substance that is an endocrine disruptor and a chemical linked to cancer. Beans in a can are among the top BPA-laden canned foods out there. When we converted our kitchen over to a plastic-free one, canned beans were a favorite staple we had to rethink. But the Greek ancestry in me knew it wouldn’t mean we’d go without beans for long. My Dad always had a pot of lentils on the stove, so why not do the same with pinto and black beans?

Every few days I pull out the slow cooker, throw some beans in (say 4 cups-worth) add quadruple the amount of water, throw in a bay leaf from our friends’ tree, several cloves of garlic from our garden (whole cloves are fine), a few extra garlic skins, chopped onion, and about a teaspoon of sea salt. Each time I do it the recipe changes but this is a basic one that works. Put the cover on the slow cooker and let ‘er cook for about 18 hours or until your beans have reached their desired tenderness. No stirring is required. Just leave the slow cooker alone and enjoy the rest of your day.

We buy our beans in bulk, 25 lbs at a time, so they come to us in a big paper feed sack. We then store them in glass jars for easy access.

I tend to turn half of the cooked beans into refried beans (just mash ’em down as you fry them with a little more garlic and onion and add some cumin and liquid aminos for salt) and then make burritos or enchiladas that we can freeze for easy school lunches to reheat for the kids. We also make black bean soup with them or just a simple bean dip.

These beans are always better than anything I’ve eaten from a can, and they cost about a tenth of the price. But the real benefit of kicking canned food is the mindfulness of slow-cooking and making your staples from scratch. Cooked beans in a slow cooker are so simple, yet they require a few minutes of forethought and planning for the meals that your family will enjoy in the week ahead. Four cups of dried beans will result in about 8 cups of cooked beans, enough for a family of 4 to enjoy for a week in many different creations. As your home fills with the buttery and savory smell of cooking beans, enjoy the pleasure, as my Dad did, of slow-cooked food and the sweet time it takes for the flavors to blend together completely.

I love olive oil tins. They’re reminiscent of the Old World where reuse of large tins is commonplace. When I think of how I’ve seen olive oil tins reused, I imagine geraniums on a sunny step in colorful olive oil planters in Italy or hammered out oil tins used as roofing or wall siding in Nepal.

I saved a couple of tins this year and other than using them as a flower vase, I couldn’t think if anything special to do with them. And then my son started having a celery craving. I hate storing celery (or anything) in plastic bags in the refrigerator, so we started storing it in large mason jars with a a couple inches of water for the stalks to stay fresh. And then the idea hit me: Turn an olive oil tin into a refrigerator celery container. It holds 2 large celery bunches perfectly!

You’ll need a Swiss Army-style jack knife with a can opener to remove the oil tin lid. And if that doesn’t work, get out the tin snips. Make sure you bend and file down all rough and sharp edges.

Be sure to put a few inches of water in your tin to keep the celery crisp and fresh. Then, throw it in the fridge! Our celery lasts weeks in this custom-made tin crisper.

How I Kicked the Plastic Food Container Habit

I have a thing about plastic. After picking up several hundred pounds of it off our beaches, and then returning home to find the same stuff in our everyday household items, especially in the kitchen cupboards holding our food, I decided to go cold turkey and threw all of our kitchen cupboard plastics out of the house.

I gave away our tupperware and all of our Teflon-coated pans and appliances on our local Buy Nothing group (I was really going deep with the anti-plastic thing). Plastic travel mugs, water bottles, our rice cooker, breadmaker, and food dehydrator were not welcome in our home. We took stock of the things that we typically bought in plastic packaging: Rice that came in plastic bags as well as various grains, pastas, nuts, and dried fruit. How was a family to switch completely to non-plastic-packaged staples?

Bulk Up: Our answer was in bulk foods. I can go to our local store with my own containers and buy most of what we need from our bulk department. I invested in some large glass jars and store almost everything in them (you can see brewer’s yeast in our last plastic containers in the upper left corner there — it’s mostly used for our pets).

An even cheaper solution is to join a local organic bulk food delivery service where I can get large amounts of staple foodstuffs on the cheap. For us, this option makes sense because we eat rice and dhal (red lentils) many times a week like most people do on the Indian subcontinent. Since we’ve raised our children to be accustomed to simple meals, we don’t want to start them on too many processed foods at this stage in their development. So, dhal bhat it is, along with Indian and Thai curries and lots of variations on rice and bean Mexican-style dishes. The kids love pasta, too, so we get all of it in bulk.

Rice comes in 25 and 50 lb bags, dhal in 25 lbs and I buy flour in 50 lb bags since we bake our own bread. Pastas comes in 10 lb increments as well as all of our nuts and dried fruits. The large bags of flour and grains are then stored inside galvanized metal bins in our pantry.

When we run out of power, we have enough staples of one sort or another to keep us going, with a veggie garden, plenty of berries and fruit trees to round out our produce needs. Even the chickens and bees contribute to our overall food production on this micro-farm.

Was it difficult to move away from plastics in the kitchen? Remarkably, no. As soon as we stopped buying single or even 1-week-lasting servings of things from the grocery store, we saw the plastics disappear. We do occasionally buy things like tortilla chips for the guacamole we make (avocados from CA of course.) They come in a crinkly chip bag, so we’re not completely devoid of plastics. Although, I’m considering getting them in bulk from our local Mexican restaurant. They make them by hand and I can just order them as takeout in my own container! We also see plastic rings around some of the glass store-bought items we get, like mayonaise. But our “trash” is truly minimal, now that the common grocery store plastic packaging has been greatly reduced.
